Languedoc-Roussillon includes the southern French départements of Hérault, Lozère, Aude, Gard, and Pyrénées-Orientales. Montpellier is the region’s capital. Languedoc was an old province of France and Roussillon is also an old historical and cultural region and they are now known together as Languedoc-Roussillon Region.

The dish from the area is Cassoulet, something that is filling a very enjoyable, but do not forget the white wine.

The recipe can be found at this link: It is near the bottom of the page, give it a try, my wife will be very pleased.
