you won’t Im a part time chef, its a custom mix of herbs… anyone can do it, just find a good combo of herbs and spices that go well on an entree and bada-bing Herb de provence. Hope that helps

I don’t know anything about Chicago, but maybe you can make the mix yourself: ‘Herbes de Provence’ is French for ‘herbs of the region Provence’: it’s a mixture of thyme, rosemary, marjoram, basil, savory. Sometimes they put in some lavender too.
Thyme dominates the mixture, so put the most of this into it. I’m sure you must be able to find these herbs somewhere in a grocerystore in chicago…
Any good supermarket or upmarket deli should stock it.

1 Tablespoon dried basil
1 Tablespoon dried thyme
1 Tablespoon marjoram
1 Tablespoon dried summer savory
1/2 Tablespoon rosemary
1 bay leaf, crumbled
Add according to taste:
lavender buds
fennel seeds
dried sage
PREPARATION:
Herbes de Provence can vary in content and proportion. Usually the mix will include thyme, bay leaf, rosemary, savory and basil. You can prepare your own blend using these herbs along with other quantities of aromatics such as lavendar, fennel seeds and sage all depending on your personal taste.
Put the herbs in a jar with a screwtop lid and shake together.
I also live in the Chicago area, one of the best resources for spices is Penzeys. There is a store in Oak Park and another in Naperville. Or you can order online at.
But you can make the herb de Provence yourself.
HERBS DE PROVENCE
Ingredients needed:
2 tablespoons dried savory
2 tablespoons dried rosemary
2 tablespoons dried thyme
2 tablespoons dried oregano
2 tablespoons dried basil
2 tablespoons dried marjoram
2 tablespoons dried fennel seed
In a small mixing bowl, combine all the ingredients together. Store in an air-tight container.
Yield: 1 cup
