If you go to the tourist board sites for the places you have mention you will find a lot of info.

The Matisse museum might be interesting to them. Full of bright colors. It might help for the adults to tell them a little about the paintings. If they like big stores, visit the Auchan (hypermarket) in La Trinite’ I am sure that they will like the cookies and candy. You can also get them toys at a discount (overall, toys are much more expensive in France than in the states). Be careful in the hotels, however. Many of the faucets for hot and cold water are separate and the hot water is VERY HOT. A small child (and some adults) can easily be scalded. Apparently, there has been no pressure to turn down the water heater (most places in the US do so to avoid lawsuits).
